Most household ovens tend to have hot and cold spots, especially older ovens. This can cause an uneven bake when using a large, flat baking tray. You can solve this problem by rotating the baking tray half way through. It's important to note that some fluffy cake-style bakes need to rise, so you should rotate a bit later through the baking process (about 80% through) so as not to knock the air out of them and ruin the rise.
